I do like fried calamari, home cut french fries, and recently, buffalo wings. There are a couple of negatives to home frying: the mess, and the used oil. When I got the Emeril fryer, however, both of those problems became pretty manageable. First off, because of the depth of the pan, and the recommended levels of oil, there is virtually no splatter on my stove. Seriously, no oil splattered because of the frying. The high walls of the pot keeps it reasonable. That, plus the fact that you can achieve 375 degrees pretty easily. I should add that I bought a thermometer to actually take the temperature of the oil, which also helps in managing splatter. After frying, I let the oil cool down to room temperature. The pour spouts on both sides of the pot allow for easy filtering of the used oil into a container. I haven't used the actual fryer, but the 5 quart pan that accompanies it is great! I have used it to cook alot of things so far, and they all turn out wonderfully. Not only it is genius but also safer. It is a great help if I make pasta or mashed potatoes. I make my own chicken stalk so the basket is a sweet touch. I put all my ingredients in the basket, veggies/onion/chicken/bone and will hook the basket once again when they are done. No more straining, no more mess. I make many kind of soup as well with it, thanks to the additional glass lid. I haven't use it for frying chicken as we hardly eat fry food. I will update when we do.
